Churro Cookies – recipe

Since the holidays are around the corner, I thought making churro cookies would be a unique twist on traditional holiday cookies. Similar to snickerdoodles, these chewy cinnamon desserts make a perfect companion for a glass of milk or eggnog!

Ingredients

Cookies (12)

  • 1/2 cup softened butter
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • 1 1/2 cup flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon

Cinnamon sugar mix

  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

Buttercream

  • 1/4 cup room temperature butter
  • 1-2 (up to you) tbsp cinnamon
  • splash of heavy whipping cream

Instructions

Mix + Bake cookies (Don’t incorporate buttercream ingredients.)

  1. Mix cinnamon sugar
  2. preheat oven to 350 fahrenheit
  3. cream butter & sugar until fluffy and light
  4. scrape sides and beat in egg & vanilla
  5. scrape sides and add flour, baking soda, & cinnamon.
  6. Make dough balls, dip them in mixed cinnamon sugar, flatten, and arrange on pan.
  7. Bake for 14-17 minutes, make sure they’re not glossy

Make frosting and frost!

8. Whip butter until smooth, add sugar, whipping cream, & cinnamon. Pipe and serve!

Decadent Chocolate Chip Cookies

Say hello to one of the best chocolate chip cookie recipes you’ll ever use. This recipe uses brown butter, which elevates the cookie to be rich in flavor and more sophisticated. These cookies are great with milk!

Ingredients

1 Stick and a Half of Butter, browned

¾ Cup of Brown Sugar

⅓ Cup of Granulated Sugar

2 Tablespoons of Vanilla Extract

1 egg and 1 egg yolk, preferably room temperature

Optional: seeds of one Vanilla Bean Pod

1 ¾ Cup of All-Purpose Flour

¾ Teaspoon of Baking Soda

1 pinch of salt

1-1 ½ Cups of Chocolate Chips or Chopped Chocolate (Semi-Sweet recommended)

Instructions

  1. First, brown the butter on the stovetop at low to medium heat. Make sure to constantly stir to ensure that the butter won’t burn. The moment you see the butter turning a golden brown color, remove it from the heat and pour it into a big bowl. Allow the butter to cool in the fridge.
  1. Combine the brown butter, brown sugar, and granulated sugar in a large mixing bowl. Add the vanilla extract and vanilla seeds. Then, add the egg and egg yolk.
  1. In another bowl, mix the flour, baking soda, and salt.
  1. Slowly add the dry ingredients to the wet ones. Add the dry ingredients in increments, STOP if the dough feels dry. 
  1. Finally, add the chocolate chips (or chunks). Remember–you can change the amount to as much or as little as you would like.
  1. To ensure that your cookies will taste delicious, chill them for at least an hour.
  1. After chilling the dough, preheat your oven to 350 degrees. Line your baking sheet with parchment paper and use a cookie scoop to scoop your dough. Bake for 10-12 minutes. 

Cool cookies before serving and enjoy!

The Best Chocolate Chip Cookies Ever

Anyone who stays at the DoubleTree knows that the best part is the warm welcoming cookies homemade by the hotel. If you are opposed to making a reservation just for the famous cookies, this recipe is just for you.

Ingredient List:

Chocolate Chip Cookies

  • ▢ 1/2 pound of softened butter (2 sticks)
  • ▢ ¾ cup + 1 tablespoon granulated sugar
  • ▢ ¾ cup packed light brown sugar
  • ▢ 2 large eggs
  • ▢ 1 ¼ teaspoons vanilla extract
  • ▢ ¼ teaspoon freshly squeezed lemon juice
  • ▢ 2 ¼ cups flour
  • ▢ 1/2 cup rolled oats
  • ▢ 1 teaspoon baking soda
  • ▢ 1 teaspoon salt
  • ▢ A pinch of cinnamon
  • ▢ 1 3/4 cups chopped walnuts (optional) 
  • ▢ 3 cups semi-sweet chocolate chip
  • 1. Preheat the oven to 300°F
  • 2. Cream butter, sugar, and brown sugar in the bowl of a stand mixer on medium speed for about 2 minutes.
  • 3. Add eggs, vanilla, and lemon juice, blending with a mixer on low speed for 30 seconds, then medium speed for about 2 minutes, or until light and fluffy, scraping down the bowl.
  • 4. With the mixer on low speed, add flour, oats, baking soda, salt, and cinnamon, blending for about 45 seconds. Make sure not to overmix.
  • 5. Remove bowl from mixer and stir in chocolate chips and walnuts.
  • 6. Portion dough with a scoop (about 3 tablespoons) onto a baking sheet lined with parchment paper about 2 inches apart.
  • 7. Optional: Sprinkle a pinch of salt on top of each cookie to create a salty and sweet masterpiece.
  • 8. Bake for 20 to 23 minutes, or until the edges are golden brown and the center is still soft.
  • 9. Remove from the oven and cool on a baking sheet.
